Tom,
I'm at that point where I ambout to make that big jump and purchase the hardware components. There is no doubt in my mind that this will do exactly what I want, …but which components to purchase to get that functionality is another question all together.

3 axis Tree 320 CNC machine with spindle speed control.
• 3 axis can be controlled with +/- 10 VDC to Gettys N360 controllers. Or drive Gould Motors directly. Motors have stall at 12.5A (I think but don't know the motors are 68.4 volts +or - 10%, and are 2 to 1 drive)
• 3 Differential encoders drawing 100mA

KFLOP I read this is the most modern platform, so this should be the starting point. But it only outputs 5V max so another board must be added to support +/- 10VDC. Also it only has single ended encoders. (KMOTION also has the single ended limitation so I see no advantage to this platform).

Initially I thought adding a KANALOG would be the cheapest and easiest way to drive the entire CNC machine as it will supply the +/- 10VDC to the Getty drives, and supply plenty of analog IO and even has 8 24V relay drivers. Unfortunately it does not appear to have any encoder inputs at all, leaving me with another board (SNAPAMP) being needed to accept differential encoders.

SNAPAMP has the differential encoder inputs, and will drive either the Gettys controllers with +/- 10VDC or if one of the controllers dies can be connected direct to the brush servo motor (or if I need to change motors in the future can also drive a brushless servo or stepper motor). The down side is I will need at least 2 SNAPAMPs. Another down side is while I have 14 Low Voltage TTL General Purpose Inputs or Outputs, I have no means to drive 12V or 24V circuits.

Assuming I have properly deciphered the specs for these boards, I have 2 choices
Choice A:
• 1 KFLOP as the power source and motherboard for the following add on boards:
• 1 KANALOG to output the +/-10VDC to my N360 Gettys motor controllers
• 1 SNAPAMP to accept the 3 (possibly 4 or 5) differential encoder inputs

Choice B:
• 1 KFLOP as the power source and motherboard for the following add on boards:
• 2 SNAPAMP to accept the 3 differential encoder inputs, and outputs the +/-10VDC to my N360 Gettys motor controllers or to drive my motors directly. I will still have to resolve the lack of analog IO

Please confirm I have analyzed this correctly and advise how I should proceed.

Kflop+Kanalog does have 16 differential inputs (Kanalog JP1 JP2) for up to 8 differential encoders.
 
The signals are converted from differential to single ended by Kanalog and passed though to the KFlop single ended encoder inputs.
 
I'd recommend using KFlop+Kanalog and keeping your existing drives if possible.
